Baked Peaches with Honey and Thyme - An Edible Sunset.

Sometimes sweet is not about sugar, but about a state. When the sun begins to set, when everything is quiet, a baked peach is a spoonful of summer , warm, soft and golden. You eat it slowly. Not because it is delicious, but because you do not want to rush .

What you need (for 2 servings):

  • 2 ripe peaches

  • 1-2 teaspoons of honey

  • 2 sprigs fresh thyme

  • optional - a little olive oil or a drop of lemon juice

  • (and a small ceramic baking dish)


How to cook:

  1. Cut the peaches in half and remove the pits.

  2. Place in a mold, cut side up.

  3. Drizzle with honey and put thyme on top.

  4. Bake at 180° for about 15 minutes until soft and warm.

  5. Serve warm, as is, or with a dollop of Greek yogurt.

What does this give:

  • relaxes

  • does not overload

  • gives a taste of comfort, body, evening

  • helps to "stop the day beautifully"

Baked peach is food that doesn't require words. It's not a dessert. It's a state. And it stays with you even after the last spoonful.
