May infusion with lemon peel

Mornings in Corfu smell of dusty zest – not juice, but warm peel that is left on the window after breakfast. I collect the zest from lemons, dry it on paper – in the shade, where the air moves. It quickly becomes fragile, ringing. After a couple of days – brew it. Not like tea. Just warm water, a little honey and a spoonful of dried peel. Sometimes I add thyme. This infusion is drunk slowly, without a purpose. It does not heal or invigorate. It reminds that the morning is not a place, but a ritual.

📌 Mini-recipe:

Lemon peel infusion

  • 1 teaspoon dried lemon zest

  • 200 ml warm (not boiling) water

  • a little thyme (optional)

  • ½ teaspoon honey

Pour water over it, let it sit for 10 minutes, drink it warm, slowly.
