What does Corfu smell like in the morning in May

Morning air with dried mint.

In Corfu in May, the morning smells not of flowers, but of something squeezed and slightly warm - like dust from mint and zest. If you open the window at dawn, the smell comes in before the light.

I often take the windowsill out to dry: a little sage, a few mint leaves, the remains of rosemary. The mint collects coolness during the night, and during the day it gives it to the tea - as if saying: “it’s me, the island” .

This smell cannot be taken with you - it can only be brewed.

📌 Observation: If you dry mint in the air, it is better to do it in the shade: then it retains its color. I tie it with thin twine and hang it on the inside of the door handle. This is how it smells in the morning all day.
