Summer compote with rose and apples - a taste that slows you down.

In the heat we seek shade. And water seems too cold, and tea too hot. But compote is ideal. It is like a cooled conversation , like a pause between tasks , like a touch of something familiar .


This compote is made from apples and rose petals. It smells like July. You can drink it from a jug or from your favorite cup. The main thing is to drink it slowly.

What you need:

  • 3-4 dried or fresh apples, cut into slices

  • 1 l of water

  • 1-2 teaspoons honey (to taste)

  • 1 teaspoon dried rose petals (or 1 fresh fragrant rose)

  • optional - a pinch of cinnamon, lavender or cardamom

How to cook:

  1. Bring water to a boil, add apples. Reduce heat.

  2. After 10 minutes, add rose petals.

  3. Cook for another 5 minutes. Remove. Cool.

  4. Add honey when warm. Drink chilled.

Why is it:

  • moisturizes, but does not cool sharply

  • comforts - body and mood

  • Suitable for children, sensitive people, those who are tired

  • leaves an aftertaste of a garden and something very kind

This compote is not a recipe. It is a gesture. Put the jug on the table. Let it brew. Drink in silence. This is the notebook of light.
