Summer vinegar with rosemary and lemon.

An easy recipe that makes even water beautiful

Some things you just want to keep on hand. Not for a recipe. Not according to the instructions. Just to have.

This is what this summer vinegar has become. Sunny. Spicy. With a slight bitterness of rosemary and zest that smells like it was opened in the morning.

I don't make it for the kitchen. More precisely, not only. It can be:

  • in salad - with olive oil

  • in water - 1 tsp per glass, refreshes better than lemon

  • in hair rinse

  • or just for the scent, when you want to feel that summer is still here

The vinegar is warm but not spicy. And if you keep it in a transparent bottle, in the light it becomes like a letter from the garden.

My recipe:

  • apple cider vinegar (not pasteurized) - 250 ml

  • zest of 1 lemon (without white part)

  • 1 sprig of rosemary

  • (optional) 3-5 lavender flowers or a little mint

  • clean glass bottle

🔄 How to cook:

  1. Place the herbs and zest in the bottle

  2. Pour vinegar over

  3. Leave in the shade for 7-10 days, shaking

  4. Strain or leave as is - for taste and beauty

  5. Store in a cool, dark place

I add this vinegar to water at midday - when the sun no longer pleases, but presses. And it smells not sour, but clear.

Some things are not meant to be used. They are meant to be let in. This vinegar is like a window that has opened not into the room, but into the garden.
