When you have no strength, but want to eat something really tasty.


Sometimes the day is just exhausting. You come home, take off your shoes — and all you want is one thing: comfort. Put something on in the background, wrap yourself in a soft blanket and have a snack. And then your hand reaches for fast carbohydrates — crackers, cereal, cookies. But deep down you want something else. Real food, hearty, warm, which seems to say: “I'm here. Everything will be fine.”

I'm not a supporter of dogmas. I just love simple food prepared with care. There is not always time for culinary feats — but even on the laziest evening you can find a corner for taste. I'm sharing what I cook myself when I want home comfort without extra effort.

1. Homemade flatbreads with anything

It's like a white canvas: flatbreads themselves are modest, but they go perfectly with what's already in the fridge.

Ingredients:

400 g flour

1 tsp salt

½ packet baking powder (about 5-6 g)

220 ml warm water

a little olive oil for frying

How to cook: Mix everything in a bowl, knead the dough - it should be soft. Divide into 6-8 pieces, roll into circles and fry for 3 minutes on each side.

What to serve:

Avocado, lemon, tomatoes and a little garlic

Quick bean pasta with herbs

Slices of cheese and herbs

2. Warm croque monsieur

A variation on a French classic - perfect for dinner when time is of the essence.

Ingredients (for 4 sandwiches):

8 slices of whole grain bread

4 slices of ham

cream cheese (e.g. Philadelphia)

a handful of grated cheese (Emmenthal or Gruyere)

Spread the bread with cream cheese, add the ham and cheese, bake in the oven for 10-12 minutes at 200°C until golden brown. You can add a pinch of thyme.

3. French scrambled eggs

Slow, tender, silky. Just what you need for a late dinner.

For 2 servings:

4 eggs

1 tbsp heavy cream

a small piece of butter

salt, pepper, nutmeg

Cook the eggs on low heat, stirring constantly. Add the cream, a little salt and seasoning. Serve with a crispy baguette and a cup of warm tea.

4. Green tabbouleh with feta

Easy, nutritious and very spring-like.

Ingredients:

200 g bulgur

greens (cilantro, parsley)

1 tomato

2 red onions

150 g feta

juice of 3 limes

olive oil, salt and pepper

Boil the bulgur, cool. Chop the vegetables and feta, mix everything, season. Cool. Suitable as a main dish or a side dish.

5. Crispy chicken pieces

Favored by children and adults. Very quick and always successful.

Ingredients:

4 chicken fillets

2 eggs

flour + breadcrumbs (½ cup each)

salt, pepper

oil for frying

Cut the chicken, roll in the egg and breadcrumbs. Fry until golden brown. Serve with herb sauce or lemon.

6. Tartines with ham and tomatoes

Almost like mini pizzas, only simpler.

You will need:

4 slices of country bread

4 slices of dried ham

2-3 tomatoes

1 ball of mozzarella

fresh basil, olive oil

Layer everything, bake for 15-20 minutes at 180°C. Serve with salad or soup.

7. Potatoes with herbs

Their aroma can restore strength even on the grayest day.

For two:

1 kg potatoes

butter

greens (onion, parsley)

salt, pepper

Fry the potatoes over low heat, stirring occasionally. At the end, add the greens, spices and a little nutmeg.

These recipes are not culinary heroism. This is gentle self-care, even if you have neither the strength nor the inspiration for everything. Sometimes one warm plate is enough to feel: I'm home. I hope you will find inspiration for your cozy evening here.
