Greek Dressing - A Little Sunshine in a Jar

Every drop of this dressing is the essence of Greek cuisine : the aroma of oregano, the tartness of lemon, the pungency of garlic, a little honey - like a ray of sunshine, and, of course, extra virgin olive oil , thick, golden, real.
I often cook it in Corfu - in a hurry, when summer calls to the table under a tree. It goes with everything: with salads, with bread, with fried vegetables. But most importantly, it unites tastes , like the Greeks unite their family at dinner.
Ingredients:
60 ml extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 clove of garlic
1 teaspoon dried oregano
½ teaspoon Dijon mustard
½ teaspoon honey or maple syrup (optional)
Salt and pepper to taste
How to cook:
Mix oil, vinegar and lemon juice in a bowl.
Add garlic, oregano, mustard and honey. Whisk.
Add salt and pepper. Try it - adjust it to your mood.
Pour into a jar and leave in the refrigerator for an hour.
Shake before serving and drizzle over salad, vegetables, cheese or chicken.
