Greek Dressing - A Little Sunshine in a Jar

Every drop of this dressing is the essence of Greek cuisine : the aroma of oregano, the tartness of lemon, the pungency of garlic, a little honey - like a ray of sunshine, and, of course, extra virgin olive oil , thick, golden, real.

I often cook it in Corfu - in a hurry, when summer calls to the table under a tree. It goes with everything: with salads, with bread, with fried vegetables. But most importantly, it unites tastes , like the Greeks unite their family at dinner.

Ingredients:

  • 60 ml extra virgin olive oil

  • 2 tbsp red wine vinegar

  • 1 tbsp lemon juice

  • 1 clove of garlic

  • 1 teaspoon dried oregano

  • ½ teaspoon Dijon mustard

  • ½ teaspoon honey or maple syrup (optional)

  • Salt and pepper to taste


How to cook:

  1. Mix oil, vinegar and lemon juice in a bowl.

  2. Add garlic, oregano, mustard and honey. Whisk.

  3. Add salt and pepper. Try it - adjust it to your mood.

  4. Pour into a jar and leave in the refrigerator for an hour.

  5. Shake before serving and drizzle over salad, vegetables, cheese or chicken.
