Skordalia – Traditional Greek Garlic Potato Dip

Skordalia is a classic Greek garlic and potato dip made with mashed potatoes, extra virgin olive oil, fresh garlic, and lemon juice. Creamy, rich, and full of Mediterranean flavor, it is traditionally served with fried fish, grilled vegetables, seafood, or warm crusty bread.
Ingredients
600 g potatoes
4–5 garlic cloves
80–100 ml extra virgin olive oil
2 tbsp fresh lemon juice or white wine vinegar
salt
freshly ground black pepper
fresh parsley (optional)
Instructions
Peel and boil the potatoes until tender.
Mash until smooth.
Crush the garlic into a paste.
Slowly mix in the olive oil and lemon juice.
Season with salt and pepper.
Add a little warm water or more olive oil if needed for a creamier texture.
Garnish with parsley and drizzle with extra virgin olive oil before serving.
