Warm taste of summer in Greek cuisine
Today, Aegean Notebooks is a flavor that is hard to put into words: fresh tomatoes , generously drizzled with extra virgin olive oil , with a slight tartness of thyme , warmed in the oven until lightly caramelized. A real pleasure in simplicity.
This recipe comes from those days when the Corfu sun is already setting towards the horizon and the kitchen smells of sweet tomatoes, herbs and tart greens...
Ingredients:
450 g cherry or grape tomatoes
2 tablespoons extra virgin olive oil
2-3 sprigs of fresh thyme
Salt and pepper to taste
How to cook:
Preheat oven to 200°C.
Wash the tomatoes, dry them and place them on a baking sheet.
Drizzle with olive oil and sprinkle with thyme leaves.
Season to taste.
Stir gently to coat all the tomatoes with oil and flavors.
Bake for 15 to 20 minutes, until the skins begin to burst and the juices begin to caramelize slightly.
Let it cool a bit and serve!
This simple recipe is a true Greek comfort food . It goes great with bruschetta, fresh bread, warm pasta, or even as a warm side dish with feta cheese.
